Monday Menu: Italian Meatball Soup

This recipe is a quick and easy soup similar to Italian Wedding Soup as it features meatballs, noodles, and broth. This is a kid-friendly meal (my daughter loves it) and I can whip this up quickly for a busy night. I hope you enjoy!

Italian Meatball Soup:

Ingredients:

2 cans low sodium chicken broth (28 oz)

1 cup water

1 cup penne pasta or shell pasta

16 frozen meatballs

1 cup pizza sauce

shredded cheese

Recipe:

1. Begin the recipe by cooking the meatballs according to their packaging. Most meatball packages allow for the option of microwave cooking which is the quickest way to speed along the process if you are short on time.

2. Combine the broth and water in a medium sauce pan and bring to a boil.

3. Once boiled, add the pasta and meatballs. Return to a boil and cook until the pasta is done. DO NOT DRAIN!

4. Reduce heat and stir in the pizza sauce. Cook an additional two minutes or until thoroughly heated.

5. Top with cheese before serving.

Serve this soup with a crusted bread and fresh romaine salad.

This recipe makes 4-6 servings. We always have leftovers for the lunch the next day or two.

My Sister on Her Graduation Day

Today is the day that my baby sister graduates high school. I know it is probably about time that I stop referring to her as the baby, but when you can remember teaching someone to talk, walk, and read they will forever be young in your eyes. My eighteen year old sister is one-of-a-kind. She has always been such a driven and focused person. There is nothing in her life that she has not given 100% of herself to accomplish. She works hard always and sets goals for herself that are above and beyond those of others her age. Sometimes I forget that she is only eighteen because her wisdom is beyond her years.

Happy graduation, Morgan! Enjoy your day and congratulations on being the salutatorian for the class of 2015! We are so proud of you!!!

A Book Review: All the Bright Places

One thing that my husband and I have in common is our shared love for literature. Although he prefers the biography/memoir genre he knows my heart is in Young Adult fiction. I was so pleased that this year for Mother’s Day he gifted a couple of books for me from my summer list. Summer hasn’t hit yet, but I have now accomplished one of my summer must-reads from my earlier post, Motivating Readers and Myself.

All the Bright Places is about two seniors battling with emotional issues and scars. The two meet on a bell tower ledge at their high school where each is prepared to take their own life. Before this event Violet and Finch are practically strangers, but this encounter brings them together and helps to form a bond between two troubled teens.

Theodore Finch is the school freak. He lives up to his label with his off-the-wall attitude and behavior. Brought up in a home of instability Finch uses his absent father as a scapegoat and lives his life barely awake. His world is dark and he feels very little until he meets Violet on the ledge of the bell tower.

Violet Markey is a popular ex-cheerleader who suffers from survivor’s guilt. A few months back she was in a car accident with her older sister and best friend, Eleanor. When her sister passes away in the accident Violet is left in a constant state of grief and is counting down the days until she can leave this town and the memories of her sister. One day she finds herself on the ledge of the bell tower because she doesn’t think she can keep on living without her sister.

After they convince one another to continue living they begin to foster a relationship that is built on their common hurts. Shortly after the bell tower incident their US Geography teacher assigns the class a project where they venture to different landmarks in their home state of Indiana. Violet and Finch use this assignment to find the beauty in the world around them and the mission of venturing to these places gives them a sense of purpose.

A majority of this book was uplifting and full of hope. Themes in this story include love, acceptance, and finding one’s purpose. I fell in love with the characters and with conclusion of the book I experienced an emotional response. I couldn’t stop reading until I found out what happened to the main characters in the end. Ultimately, the ending of the book was not what I had hoped and I was disappointed, but I understand the lessons that the author was trying to teach using her own experiences as inspiration.

The Least of These

From his seventh floor office Thomas had a beautiful skyline view. The monstrous structures that formed the perspective through his window oftentimes stole away his attention. One minute he was processing purchase orders from billionaire clients and the next he caught himself daydreaming about how this vantage point was very different from the one which he grew up accustomed to.

Thomas had worked his way up from the rural village he was raised in starting first with his state university degree. From the age of twelve Thomas knew that he was destined for more than inheriting his family farm and the monotonous tasks attached to the life of a rural man. On rainy evenings he would find his mind wandering to the beautiful concrete palaces portrayed on television. His senior year of high school he enrolled in an internship in the nearest town where he filed paperwork for the city. Those long days loading filing cabinets were spent planning out a future far from sharing the road with tractors and driving fifteen miles to the nearest bank.

When he graduated first in his high school class of sixty-five students Thomas began to view himself superior to those around him. He no longer believed that the city life was his personal destiny, but he began to see this as the only real path in life. Thomas fell prey to the American Dream. Despite the disappointment of his parents Thomas declared his business major and packed up his old station wagon and headed for the big city.

Once he settled into this new life he had chosen he never looked back. This was his calling. There was no time for dating or forging friendships outside of the workplace. He worked his way up the ranks in various jobs. Once he had done all of the available tasks and filled all of the positions Thomas would start applying elsewhere and move on to conquer another company. As impressive as his resume was Thomas struggled to find the job he wanted to spend the rest of his working years in.

One Thursday in June Thomas gazed out his crystal-clear window and itched to be outside. The sun was beating down on the people of the pavement below. Lunch time was approaching, but usually Thomas worked through his allotted lunch time. If he was going to apply for the Vice-President vacancy he had many loose ends to tie up in a short period of time. He also had been crunching the numbers and figured that if he procured that position he would finally be able to afford the studio apartment he had been desiring for quite some time.

But as he continued to lose his focus by the glare of the summer sun Thomas decided that a five minute walk around the block may improve his productivity. He wrapped up the current file and headed out his corner office past the interns and administrative assistant.

“Going out for lunch, Doc?” Corrin, the intern, asked of Thomas.

“Just for fresh air.”  He declared as he entered the elevator at the end of the hall. Thomas wanted to be clear that he was not about to break his habit of working through the lunch hour. He had a stern and reputable image to uphold in the eyes of the interns.

Down on the street level Thomas emerged from the glass double doors and entered the hustle and bustle of the busy city. A girl in a a tight hair bun, sunglasses, and black heels balanced a cup of coffee in one hand and was placing a phone call on her iPhone in the other. A man passed in front of Thomas wearing a perfectly tailored, imported suit. A group of young interns meandered through the quick pace of the crowd clinging to the lunch orders they were called upon to fill. Being in the company of so many people on a mission on the streets of an overpopulated city made Thomas feel at home. He quickly blended into the scene as if he was born to wear a slim fitting suit and Italian leather shoes.

He began his trek around the executive block at a brisk pace. His eyes were on the pavement and he attempted to clear his mind as his stride widened. In his mind he began to run through his to-do list for the evening: pick up some suits at the dry cleaners, fix the leaky sink in the guest bathroom, and pre-order the next book by his favorite business author on Barnes and Noble.com. He was so preoccupied that he barely noticed the man in front of him.

The man was in less of a rush and had become a stumbling block in Thomas’s immediate path. In the last second before impact Thomas attempted to dodge the man, but incidentally in his toil to not collide with the man he made it more sure to occur. As Thomas moved to the left of the man his right shoulder bumped with the man’s left elbow. Embarrassed of his own mistake Thomas plotted quickly to pick up his pace and get out of the line of sight for this stranger as quickly as possible. The man, on the other hand seemed less bothered by the situation than Thomas had anticipated.

“Sorry, sir.” The man said apologetically as though he had been the one day dreaming haphazardly.

Thomas was already a good five paces ahead of the man, but turned when the man spoke. He caught a glimpse over his shoulder and was taken aback by the appearance of the man with which he had made a collision. The man wore tattered clothes that were visibly of the wrong size for his small malnourished body. His hair was dark and matted as though he had not bathed or brushed it in a couple of days. A substantial amount of dirt had made this man’s nail  bed its home and his skin was oily as it reflected the rays of the warm June sun.

Thomas shrugged off the encounter after a temporary moment of pity for the man in need. He continued his walk at an even quicker pace to avoid further interaction with a man much his inferior in society. He jutted through an alley to head back toward the office. Once he reached the glass double doors he entered and headed back to the seventh floor and continued his productive work day as though nothing of consequence had just occurred.

A few days later the sun was beaming once again through the large glass windows of his office. Thomas was engrossed in his work and listening to his favorite podcast. The solar thermostat on the wall stated that the weather was eighty-six degrees Fahrenheit outside and Thomas once again got the desire to abandon the workload to experience the beauty of fresh air. Before embarking on a another walk around the block Thomas resolved to stay more aware of his surroundings in order to avoid another “run-in.”

This walk was quite uneventful. The novelty of the beautiful weather must have run its course for many as there were far less people out and about on this particular day. Thomas completed a walk around the block quite quickly and so decided to lengthen his route to include the next block as well. The next block housed one of the city’s urban parks. As he strode through the beautiful landscape with the skyscraper background Thomas noticed a woman and two small children. At first, it was their laughter that caught his attention. The young children were playing a game of “I Spy” as their mother laced up a pair of tennis shoes. All three were sitting in the grass just off of the pavement.

“Richie, hold out your foot. I hope this is a better fit. It’s the best I could find at the shelter.” The boy struggled and grunted to fit his wide foot into a shoe that was obviously too small. The three of them worked to get it over his foot, and although Richie was clearly uncomfortable he smiled and hugged his mother when they finally got his foot inside of the shoe.

Thomas tried not to pay attention to other people. In fact, he had built his life around the principle that he must only be concerned about himself. However, something about this family made him think about his own life. A feeling of remorse for the boy in the shoes came over him. These feelings made Thomas uncomfortable. He quickly pushed them from his mind and made his way back to work.

That night, Thomas decided to treat himself to a meal at his favorite bistro on the other side of town. Parallel parking on the city streets was no easy task so he opted for valet parking. As Thomas traded in his keys to the Volvo with the Valet he caught a glimpse of a small group forming across the street outside of an old cement building. A rather large group of people were congregating and moving slowly through the single-door entrance to an Episcopal church. Of the people in the line one stood out to Thomas in particular, the man he had collided with days before on the sidewalk.

Something tugged on his heart and for a moment Thomas lost control of his body. Instead of embarking on a much anticipated meal at a table for one Thomas crossed the street and joined the others as they filed into the church. He couldn’t remember the last time he had crossed the threshold into a sacred place of worship. Thomas was not one to dabble in religion. It seemed that many of the people he knew that were religious lived a rigid life full of rules and still struggled with the best of them. He never saw much benefit in worshiping a God that didn’t take care of his own and yet demanded so much from them.

Once he entered the sanctuary he found a vacant pew in the back and tried to blend in, although clearly he wasn’t as poor or dirty as many of the others present. The service began quickly and although Thomas wanted to sneer at every scripture read and leave during the singing of hymns something inside of him kept him there. He listened as the rector read from a script, but could not deny the passion in his voice.

At the conclusion of the service there was a call to pray at the altar with some of the deacons of the church. Thomas took that as his cue to quietly make an exit. As he turned toward the exit behind him he felt a tug at his elbow. The man he had made contact with a few days ago on the sidewalk smiled at him once again and pulled him toward the altar and led him to pray. Thomas was stunned to realize that the assumed homeless man was in fact a deacon of the church. As they approached the altar together Thomas was moved to tears. He noticed in that moment that all his life he had been chasing wealth and prestige which had left him lonely and empty. He prayed that day at the altar and in the presence of the poorest people in the city Thomas came to know a Lord that sees beyond income and status to the heart of His followers. As he looked around he saw that all of those around him looked like the city’s poorest yet the most content. And for the first time in years Thomas smiled genuinely.

This Wednesday I’m Wearing…

One of my favorite parts of my daily routine is creating my outfit for the day. I love capturing my mood in a palette of colors, textures, and accessories. Someone once told me that getting ready should be fun. I personally love it. If you don’t love getting ready then you may not be approaching it from the same creative perspective that I am.

Your outfit says so much about you even when your mouth is closed. It tells the world around you about how you feel, view yourself, and what you want to become. I want to start documenting some of my favorite outfits and looks for you. I’m really interested in what you see when you look at my ensemble. Comment below! Anxiety Can Be Crippling

Anxiety can be a crippling state of mind. It can creep in subconsciously and affect the way that you live your life before you even notice that it is there. Anxiety, much like Satan, attacks when you are weakest and gnaws away at the peace and joy that God has gifted you with. I am speaking from experience when I say that anxiety is a tool used to get you off focus and it proves that you are relying on yourself and not God.

I’m a naturally anxious person. I worry and fret and bear the burden of others heavily. My whole life I’ve been able to maintain anxiety to a relatively safe and healthy level, but as I’ve grown older I’ve noticed that anxiety has been harder and harder to control. Things that once had no effect on me are beginning to wear me down and it is now time that I take back control of my mind.

So many  things run through my head as I try to pinpoint the cause of some of my recent anxiety, but in reality the cause is a multitude of situations. Things build up: one on top of another. Eventually, they catch up to me and my nerves are shot.

Today, as I pray I am focusing on scripture verses which speak to the issue of anxiety. I know that a big part of getting this under control is my perspective. If I can focus on the peace and joy of God I know it will help me to overcome my circumstances. Fear is something that we bring into our own life by not letting go and trying to control everything without giving it to God. We were never meant to bear the burden of life without the help of God.

If you are anything like me and struggle with anxiety I challenge you to join me in reading through the following verses and commenting with something that sticks out to you that you can apply to your individual life.

1 Peter 5:7– Cast all your anxiety on Him because He cares for you.

Proverbs 12:25– An anxious heart weighs a man down, but a kind word cheers him up.

Philippians 4:6- Do not be anxious about anything, but in everything, by prayer and petition present your requests to God.

For me, I know all three of these verses by heart and can quote them verbatim, but none of that matters if I can’t apply it to my life. I need to do a better job at recognizing when I am beginning to fear or struggle and immediately follow the instructions from Philippians 4:6 and pray to God. I need to relinquish my desire for control and give God permission to take control of my life. Only then will I see change.

Essential Oils Party

This weekend has been nothing if not a whirlwind. I was constantly moving from one event to the next without much downtime between. So, to spend the better part of my Sunday afternoon at home is a blissfully welcomed activity. I’ve been off my writing game for a few days so I feel like it is high time to update you on some of the things going on in my life.

Among other things I spent my Saturday doing some Essential Oils mixology with good friends from my church cLife group. My friend has really been educating me on the benefits of Essential Oils and through her I’ve been able to purchase many oils at whole-sale prices. I originally posted about my journey into Essential Oils in March and if you’d like to read that post it is here.

Slowly but surely I have been building up my collection to include: Lavender, OnGuard, Balance, Lemon, Peppermint, Grapefruit, Geranium, and an OnGuard Cleaner Concentrate. At the party I made a few purchases including my new lifesaver: a compact traveling oil carrier which holds eight small sample-sized bottles. I loaded that thing up with some of my favorite oils and others that I would like to try. It’s been such a pain to store oils for traveling before I made this purchase. If I knew I would need an oil I would wrap up the bottle and stick it in my purse hoping that it would not spill all over the contents therein. Now, I can keep all of the oils with me at all times, because you never know when you are going to need a little oil. This was $6.50 well spent!

I also made my first ever bottle of homemade bug spray using essential oils and other organic ingredients. (Recipe below)

Essential Oils Bug Spray (4oz):

*As always you want to make sure that you store your essential oils in a glass container as the potency of the oil can eat away at plastic and man-made materials.

10 drops Terra Shield

10 drops Purify

10 drops Cedarwood

10 drops Peppermint

1 Tb Witch Hazel

Fill to the top with water

Now, I’m ready and armed for the upcoming graduation parties and Memorial Day Grill-outs. Bring it on Mother Nature :)

The last  time I posted about Essential Oils I gave a list of some ways that I’m using Essential Oils in my home and with my family. Here are some ways I’ve been using oils recently:

1. Grapefruit and Geranium: As many of you are aware due to my recent posts I’ve been struggling with gall bladder issues lately. My good friend had some extra Grapefruit and Geranium oils and brought them to me. Geranium supports the overall digestive health, but the Grapefruit oil is specifically used for breaking up gall stones. I had a few episodes while passing gall stones a few weeks ago and so I would place a little bit of oil on my skin around the locale of the gall bladder. At my ultrasound appointment last week the doctor reported that the swelling of my gall bladder had gone down and I had no more stones visible. I am so grateful!

2. Peppermint: Peppermint is one of those oils that has many uses. It can help with headaches, body aches and pains, energy, and insect repellents (especially spiders!) Most recently my husband has been asking for Peppermint when he gets headaches. At first, he thought I was crazy replacing many of our medicine cabinet staples with oils, but he has really seen results. Even just today he was beginning to feel a headache coming on so he went straight for my carrier and rubbed a little bit of the oil on his temples. I sometimes put a little bit (less than a drop) in my coffee in the morning since it is an invigorating oil. For the same reason I sometimes put a drop in the bottom of a hot shower which creates a Peppermint mist throughout the room flooding the shower with the beautiful aroma and energy. I could go on and on with uses for Peppermint.

3. Lavender and Balance: As I mentioned in a previous post I use both of these oils with my anxiety. Lately, I have been facing some major anxiety. Anxiety is something I am dealing with on multiple levels as far as how it is affecting me mentally and physically. In order to avoid medicating myself for my anxiety I have been using Lavender and Balance daily. If I miss a day of using these oils it is evident in my mood and behavior. Yes, a big part of my anxiety is triumphed by prayer, but I use these oil blends to help with the physical effects as well. A couple of times a day I rub Lavender on my chest. When we have anxiety we often feel that anxiety manifest itself in certain parts of our bodies. Lately, I have experienced anxiety so strong that it has led to chest pain and the Lavender works as a calming agent which also helps me to relax my chest muscles. I use Balance on the back of my neck and shoulders to help relax those muscles as well. I have a CAT scan this week to look into the chest pains and make sure there is nothing beyond anxiety as the cause. I am almost certain that my recent illness coupled with the end of the school year have just caused me to subconsciously stress myself out. The oils have helped my muscles to relax and prayer and wisdom from friends have helped with the mental aspect of anxiety.

A couple more things I learned at this Mixology party:

1. Not every person will react the same to each oil. One oil that helps me deal with headaches and tension may not work for someone else. You find what works best for you by trial and error.

2. Less is more. Whether you use a dime sized drop or three drops on your temple you will get the same results. The oils are potent and you should save your oils and your money and use the least amount possible.

3. Oils can be used to treat both physical and emotional symptoms. Every oil has a few physical ailments that it can treat, but it also has some emotional symptoms it can heal and help you work through.

4. Always dilute oils when putting them on children. Oils can be diluted with water, lotions, and other carrier oils like Grape seed Oil and Fractionated Coconut Oil.

So what’s next for me?

My family’s next oil investment is a diffuser for our home. So far we have been able to mask the method of diffusing through using hot showers filled with oils and putting oils on the air filter, but as the summer months approach neither of these methods are going to be quite as effective. I’m in the market for a diffuser and would love some help in deciding on the best size and brand. Please comment below with some advice.

I’m on the Mend

For over two weeks now at this point I have been battling some type of infection in my gall bladder. I’ve been exhausted at all times, not feeling like myself, and experiencing less than desirable symptoms most of the day. I am happy to say that my ultrasound relayed that things are getting better and I’m on the up and up. I have another test on Tuesday, but I am hopeful that it will be the end of the road for this illness.

I’m overjoyed to regain myself and my energy levels.

I’m not one to take selfies, but I decided since I was feeling better and I absolutely loved my Premier Jewelry set that I would do some classroom selfies yesterday. Enjoy the goofy pictures and be prepared to hear from me more often now that I have enough energy to think clearly enough to write. It’s been too long.

I Took the Leap of Faith

Dear fans, followers, and friends,

I have finally done it. I have sent off some of my writing to publishers!

For so long I have had a goal of one day publishing some of my writing and today I woke up and decided it would happen. I’m starting smaller and sending short articles out to some of my favorite magazines and online journals in hopes of someone taking a chance with me. I don’t have much beyond this blog to use as a reference, but I am confident that someone somewhere will find what I have to say relevant to them.

I set a goal that I would focus on sending out writing samples to five publishers each month and my prayer is that God will put my writing in the hands of someone who will see value in it. One reason I have not done this before now is because I’ve been fearful that I haven’t reached writing perfection, but the more I read and the more I study the writing field the more I realize there is no such thing. (If there were, then the need for editors wouldn’t be there.) I know that if I waited for perfection I would never end up sending out a manuscript or article to any publisher. Fear of failure is crippling, but this is an act of victory over fear on my part.

So today in a moment of ambition and prayer I made my first submissions in commitment to my goal. Please join me in prayer that a goal of mine may someday be realized and that God’s gift of writing to me may somehow reach people in a way that it never has before. I will keep you updated as I hear from publishers with both good and bad news. I anticipate that the road to publishing is paved with rejection, but my prayer is that despite the numerous rejections I am bound to receive that God will align my path with the right organization for using me as His tool.

Over the past several months I have been working in collaboration with some of my colleagues to map out our first ever whole-school read in the Freshman Academy. I have been zealously searching for the best materials and novels to use as a common experience to usher in the new freshman class next year. This is a trend that is becoming popular among universities and secondary schools and the idea behind the common school read is fostering a community of readers throughout the student body and faculty as well.

One of the biggest decisions when planning out a novel study that involves so many people is the choice of novel. We set out to discover a novel that the students would enjoy, be able to relate to, and that communicates a coming-of-age message with which they could sympathize. I turned to the school librarian for wisdom as she is an amazing resource. Our school has a Battle of the Books group which she advises and they travel and compete against other schools in their knowledge of prescribed books. Recently, this club had read Not a Drop to Drink and the students really enjoyed this book. She recommended that I take a look at the novel and see what I thought about using that as the subject material for the whole school read.

One thing I loved about the book from the beginning was that the author is from relatively near to where I live and specifically mentions the area where I live within the first five pages of the novel. That’s one thing that I thought may help to draw in some of the students especially because of the post-apocalyptic nature of the book. From the beginning of the book I wanted to know what happens to South Bloomfield!?!

Not a Drop to Drink is about a girl named Lynn and her mother, Lauren. There is a shortage of water in their post-apocalyptic world, but Lynn and her mother have their very own pond. Their lives are spent protecting their pond, house, and water source at all costs. I particularly love the opening line of the novel:

“Lynn was nine the first time she killed to defend the pond, the sweet smell of water luring the man to be picked off like the barn swallows that dared swoop in for a drink.” (McGinnis 1)

In the beginning, Lynn is used to a life of doing whatever it takes to survive. Her knowledge of life beyond the boundaries of her property are limited to the few trips she’s taken for wood and looting already empty homes. Her mother has taught her all she needs to know about survival and never hesitates to extinguish whatever life form threatens the security of the life she has worked so hard to build for her daughter.

After a series of emotional events Lynn is left questioning the only life she has ever known. She learns her own limitations and the value of trust. Also, amidst her circumstances she begins to see the value in others as they face the same struggle as she: survival.

I must admit that I can foresee my students falling in love with this novel. Some of the messages it conveys are ones that are hot topics in Young Adult media culture right now like: Is it ever okay to kill? Should the government control water sources? How can we preserve water in a world with a booming population?

It’s hard to say much more about this novel without giving away the premise. There are many plot twists and surprising scenes and you should read for yourself to see how things end up for Lynn in her quest to protect the things in life that mean the most to her. I look forward to reading the sequel, In a Handful of Dust because Mindy McGinnis has me hooked to the characters and world she has so carefully created.
